I was raised between Hong Kong and New York City.

It is a Western environment in an Eastern setting, a city that mastered adaptation without surrendering its identity.

Milk tea influenced by British rule, perfected in cha chaan teng culture.

Pineapple buns beside espresso machines.

Soy sauce and Worcestershire on the same table.

Classic European technique

layered over Cantonese Foundations.

That philosophy became the foundation of The Collectors Bar.

My fellow Collectors and I travel with intention.

We study flavor, structure, memory, and ritual.

We refine stories into ingredients.

We translate culture into experience.
